A family-run artisan cheese dairy in a rural area, with its own dairy herd. Direct farm sales, two farmers' markets a week, deliveries to a handful of local restaurants. Product quality well recognised, but a daily routine crushed by admin: paper HACCP registers, manual herd tracking, staff schedules on Excel, and pricing that hadn't changed in five years. The cheesemaker spent his evenings filling in forms.
